Making sense of the senses
Quang knows that coffee lovers employ many different senses when enjoying a cup, and that his
role is to help enhance this experience. “What I am most passionate about is evaluating the sensory quality of coffee,” he says. “The taste, the smell, the feel.” By taking great care to roast at the right time, at the right temperature, he’s contributing to greater quality and consistency. “Coffee needs balance. Coffee needs harmony,” he concludes.
